The quality of the shrimp make a difference- I prefer to use fresh shrimp. There are many sizes of shrimp and depending on variety, shells may be light grey, brownish-pink or red. When cooked, the shell will become reddish and meat will turn pink. Shrimp should have a mild odor and firm-textured meat.

How to Prepare Oven Grilled Shrimp Cocktail Recipe

Makes 4 servings

Ingredients: 1 pound (480 g) fresh large shrimp, 1 clove garlic, 1/8 teaspoon crushed red pepper flakes, 2 tablespoons (30 ml) olive oil, 1 lime, freshly ground black pepper, to taste

For Cocktail Sauce: 2/3 cup (160 ml) ketchup, 2 tablespoons (30 ml) prepared horseradish, 2 teaspoons (10 ml) freshly squeezed lemon juice, 2 teaspoons (10 ml) Worcestershire sauce, a few drops of your favorite hot sauce.

Instructions: Shell and devein the shrimp. Set aside. Peel and mince the garlic. Zest the lemon. In a large mixing bowl, combine minced garlic, lemon zest, olive oil, crushed red pepper flakes, and black pepper. Stir well.

Add shrimp and marinate for 15-20 minutes, stirring occasionally and making sure shrimp are covered completely with the marinade.

Meanwhile, prepare the cocktail sauce: In a small mixing bowl, combine ketchup, horseradish, lemon juice, Worcestershire and hot sauces. Mix well. Wrap the sauce with plastic wrap and refrigerate until ready to use.

Tread the shrimp into metal and soaked bamboo skewers. Preheat the grill to high. Add shrimp skewers and cook for 3-5 minutes or until they are pink, turning once. Remove grilled shrimp skewers from the oven and transfer to a serving platter.

  • 1 oz (30 ml) olive oil
  • 1 lemon, zested
  • 1/4 teaspoon freshly ground black pepper
  • For the Cocktail Sauce:
  • 2/3 cup (160 ml) ketchup
  • 1 oz (30 ml) prepared horseradish
  • 2 teaspoons freshly squeezed lemon juice
  • 2 teaspoons Worcestershire sauce
  • a few drops of hot sauce

Method

Step 1

Place peeled and deveined shrimp in a large bowl. Add minced garlic, red pepper flakes, olive oil, lemon zest, and black pepper. Toss well, making sure shrimp are completely covered with the marinade.

Step 2

Cover the bowl and refrigerate for 15-20 minutes.

Step 3

For Cocktail Sauce: In a small mixing bowl, combine all sauce ingredients. Mix well and set aside.

Step 4

Preheat the grill to medium-high heat. Add shrimp skewers and grill, turning once for about 3-5 minutes.

Step 5

Remove grilled shrimp from the grill and transfer to a serving plate. Serve hot with the cocktail sauce.
