Fried Lemon-Garlic Shrimp Recipe

Makes 4 servings

Ingredients: 3/4 cup (180 ml) instant grits, kosher salt, and freshly ground black pepper, to taste, 1/4 cup (60 ml) grated Parmesan cheese, 3 tablespoons (45 ml) unsalted butter,1ยผ pounds (600 g) medium raw shrimp, peeled and deveined, tails intact, 2 large cloves garlic, peeled and minced, a pinch of cayenne pepper, freshly squeezed juice of half lemon, plus wedges for serving, 2 tablespoons roughly chopped fresh parsley

Instructions: Pour 3 cups (750 ml) of water into a medium saucepan, cover and bring to a boil over high heat. When boiled, uncover and slowly stir in the grits, 1 tablespoon (15 ml) salt, and 1/2 teaspoon (3 ml) black pepper. Reduce heat to medium-low and cook, stirring occasionally, until thickened, for about 5 minutes. Stir in grated Parmesan cheese and 1 tablespoon (15 ml) of unsalted butter.

Remove the saucepan from the heat, season to taste with salt and black pepper, cover, and set aside. Keep warm.

Meanwhile, in a large mixing bowl, place the shrimp and season with salt and black pepper. In a large nonstick skillet, melt the remaining 2 tablespoons (30 ml) of unsalted butter over medium-high heat. Add seasoned shrimp, minced garlic, and cayenne pepper. Cook, tossing, until the shrimp are pink, for about 3-4 minutes.

Remove the skillet from the heat. Add 2 tablespoons (30 ml) of water, freshly squeezed lemon juice, and chopped fresh parsley. Stir well to coat cooked shrimp with the sauce, then season with more salt and black pepper.

Divide the grits among shallow bowls, then top with cooked shrimp and sauce. Serve hot with lemon wedges. Enjoy! You may also like to cook shrimp in a slow cooker.

Ingredients

  • 3 tablespoons clear honey
  • 1 tablespoon low-sodium soy sauce
  • 1/4 teaspoon crushed chili flakes
  • 1 teaspoon fresh ginger, minced
  • 3 cloves garlic, peeled and minced
  • 3/4 pound (360 g) medium raw shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons sliced green onions
  • cooked brown rice

Method

Step 1

In a medium mixing bowl, combine honey, soy sauce, chili flakes, ginger, and garlic. Mix well and set aside.

Step 2

In another medium bowl, combine shrimp and olive oil. Season to taste with salt and blck pepper, then toss well to coat.

Step 3

Heat a medium saucepan over medium-high heat. Place seasoned shrimp into the pan in an even layer and cook until seared, for about 1-2 minutes. Flip the shrimp over and cook for further 1 minute.

Step 4

Pour in reserved honey-garlic marinade and cook until shrimp are cooked through, for about 1 minute. Remove cooked shrimp from the pan and transfer to serving plates. Continue cooking sauce until it thicken, then remove from the heat and pour over cooked shrimp.
