Ingredients
- 1ΒΌ cups (310 g) all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/4 cup (60 g) cold unsalted butter,cut into cubes
- 1 large egg,lightly beaten
- 1/2 cup (125 g) freshly grated Parmesan cheese
Method
Step 1
In a food processor,process salt,all-purpose flour and cayenne.
Step 2
Sprinkle butter over top of flour mixture and process until butter is the size of large-flake oatmeal.
Step 3
Add beaten egg and grated Parmesan cheese and process until dough begins to form a ball ( pulse about 8 times).
Step 4
Dust work surface with flour. Roll out dough to 1/8-inch (3 mm) thickness.
Step 5
Cut into rounds,using cookie cutter. Place on a baking sheets at least 2 inches (5 cm) apart.
Step 6
Preheat oven to 325F (160 C). Bake,switching and rotating baking sheet halfway through,until browned (for about 20-25 minutes).
Step 7
Set aside and let cool for 5 minutes. Serve Parmesan crackers warm.
