Peach Sundae
Ingredients
- 2 large ripe peaches, peeled, halved and stoned
- 1 tablespoon peach brandy
- 1 Β½ oz (45 g) caster (superfine) sugar
- 1 tablespoon apricot jam
- peach or vanilla ice cream
Method
Step 1
In a mixing bowl, combine one roughly chopped peach flesh, brandy, and caster sugar. Mix well and refrigerate for 30 minutes.
Step 2
In a saucepan, melt apricot jam with 1 tablespoon of refrigerated liquid. Divide chopped fruit and juices between two serving dishes. Top each with scoop of ice cream and peach half.
Step 3
Spoon the warmed jam over and serve immediately.
