Ingredients
- 2 large hard boiled eggs,peeled and chopped
- 1/2 oz (15 g) butter
- grated cheese(Parmesan or Cheddar)
- 2 slices white bread
- lettuce leaves for garnish
Method
Step 1
Heat butter in a large nonstick skillet. Add bread and fry until lightly browned from both sides. Drain fried bread,reserving cooking liquid.
Step 2
On fried bread,layer evenly chopped eggs and grated cheese. Pour over reserving butter.
Step 3
Preheat oven to 400°F(205°C). Place fried bread in preheated oven and cook for 6-8 minutes,until cheese is melted. Remove poached eggs from the oven and set aside.
