Pork Roast with Mashed Potatoes in Slow Cooker

Ingredients

  • 1 teaspoon fennel seeds
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper
  • 1 boneless pork shoulder roast
  • 1 pound (480 g) sweet potatoes,peeled and cut into 1-inch pieces(2.5 cm)
  • 1 cup (250 ml) chicken brot

Method

Step 1

In a small bowl, combine the first six ingredients. Mix well.

Step 2

Remove fat from roast pork. Rub roast all over with fennel seed mixture. Cut roast pork to fit into a 3½ or 4-quart slow cooker. Set aside.

Step 3

Set aside. Arrange sweet potatoes in a slow cooker. Top with roast pork. Pour chicken broth over the mixture in the slow cooker. Cover the pot.

Step 4

Cook on low heat for 8-10 hours, or on high heat for 4-5 hours. Transfer roast pork to a cutting board. Slice roast.

Step 5
