Pressure Cooker Tomato-Chile Pork Chops and Rice Recipe

Pork loin chops with vegetables and rice cooked in an electric pressure cooker. Very easy and delicious pork recipe. Ready in 10 minutes!

Makes 4 servings

Ingredients: 2 tablespoons (30 ml) olive oil, four 1/2-inch (1.25 cm) thick boneless pork loin chops, 1 large yellow onion, peeled and chopped,  1 can (4½ oz (135 ml)) chopped mild green chilies, 1/2 tablespoon (8 ml) dried oregano, 1 can (14 oz (420 ml)) diced tomatoes, undrained, 1 cup (250 ml0 long-grain white rice (white basmati rice fits very well), 1½ cups (375 ml) reduced-sodium low-fat chicken broth

Instructions: In a 6-quart (6 l) electric pressure cooker, heat olive oil set on the browning mode. Add half of the pork chops and cook until browned on both sides, for about 4 minutes. Transfer cooked pork chops to a plate and repeat with remaining chops.

Add chopped yellow onion to the pot, and cook, stirring occasionally, until softened, for about 4 minutes. Stir in green chilies and dried oregano. Cook, stirring, until aromatic, for a further 45 seconds. Stir in diced tomatoes with their juice and uncooked rice, then pour in chicken broth.

Nestle cooked pork chops into the cooker. Pour any accumulated juices from the plate into the cooker.

Cover the pressure cooker and lock the lid. Set machine to cook at high pressure. Set timer to cook for 10 minutes. Using the Quick Release method, bring the pot’s pressure to normal, keeping the cooker closed, and set aside for 10 minutes to steam the rice.

Unlock the pressure cooker and open the lid. Transfer cooked pork chops with rice and vegetables to serving plates. Serve hot.

Ingredients

  • 1½ teaspoons toated sesame oil
  • four 1/2-inch (1.25 cm) thick boneless pork loin chops
  • 6 medium scallions, thinly sliced
  • 1 teaspoon minced garlic
  • 1/2 cup (125 ml) low-sodium chicken broth
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons dark brown sugar
  • 1 tablespoon rice vinegar

Method

Step 1

In a 6-quart (6 l) electric pressure cooker, heat sesame oil. Add half of the pork chops and cook until browned on both sides, turning once, for about 4 minutes. Transfer cooked chops to a plate and repeat with the remaining pork chops.

Step 2

Add sliced scallions and minced garlic. Cook, stirring often, until aromatic, for about 1 minute. Stir in chicken broth, soy sauce, brown sugar, and rice vinegar. Cook, stirring continuously, until the sauce begins to bubble.

Step 3

Return cooked pork chops and any accumulated juices to the cooker. Cover the pressure cooker and lock the lid. Set machine to cook at high pressure. Set timer to cook for 10 minutes.

Step 4

Using the Quick Release method, bring the pressure cooker to normal. Carefully unlock and open the pot.

Step 5

Unlock and open the pressure cooker. Transfer pork and broccoli to serving plates. Pour sauce over and serve hot.
