Pressure Cooker Curried Beef Short Ribs and Potatoes Recipe
Boneless beef short ribs with potatoes, cinnamon, and Thai red curry paste cooked in an electric pressure cooker.
Makes 6 servings
Ingredients:
1 tablespoon (15 ml) canola or vegetable oil, 1 oz (30 ml) Thai red curry paste, 4-inch (10 cm) cinnamon stick, 6 green cardamom pods, 1 teaspoon (5 ml) whole cloves, 3 pounds (1.44 kg) boneless beef short ribs, trimmed, 1 cup (250 ml) coconut milk, 2 tablespoons (30 ml) packed dark brown sugar, 1½ pounds (720 g) small white potatoes, unpeeled and halved
Instructions: Heat the oil in a 6-quart (6 L) electric pressure cooker set on the browning mode. Add Thai curry paste, cinnamon stick, cardamom, and cloves. Cook, stirring, until aromatic, for about 1 minute.
Add beef short ribs and toss well to coat with spices, then pour in the coconut milk and stir in the brown sugar until completely dissolved.
Close the pressure cooker and lock the lid. Set the pressure cooker at high pressure, then set the timer to cook at high pressure for 35 minutes.
Using the Quick Release method, return the cooker’s pressure to normal. Unlock and open the lid. Nest halved potatoes into the sauce around the beef. Close the pressure cooker and lock the lid. Set the machine to cook at high pressure and the timer to cook for 15 minutes. Reduce the pressure.
Turn off the pressure cooker, letting its pressure fall back to normal naturally, then unlock and open the lid. Stir well and transfer the beef short ribs mixture to serving plates. Serve hot.

Pressure Cooker Easy Beef Short Ribs Recipe
Ingredients
- 2½ pounds (1.2 kg) beef short ribs, cut into strips, trimmed
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup (250 ml) low-sodium beef broth
- 3/4 cup (180 ml) red wine vinegar
- 3/4 cup (180 ml) molasses
- 1/4 cup (60 ml) chili sauce
- 1 oz (30 ml) tomato paste
- 1 oz (30 ml) Worcestershire sauce
- 2 tablespoons minced garlic
- 1 teaspoon chili powder
- 1/4 cup (60 ml) unsalted butter
- 1 cup chopped yellow onion
Method
Step 1
In a large Ziploc bag, combine all-purpose flour, salt, and black pepper. Stir well. Add beef strips and seal the bag squeezing out the air. Shake well until the meat is completely coated with the flour mixture.
Step 2
In a large bowl, combine beef broth, red wine vinegar, molasses, chili sauce, tomato paste, Worcestershire sauce, garlic, and chili powder. Mix well and set aside.
Step 3
Melt the butter in an electric pressure cooker set on the sauté mode. Add seasoned beef strips and cook, stirring occasionally, until meat is browned on all sides, for about 10 minutes.
Step 4
Stir in chopped yellow onion, then pour in reserved tomato sauce.
Step 5
Close the pressure cooker and lock the lid. Set the machine to cook at high pressure, then set the timer to cook for 20 minutes.
Step 6
Reduce the pressure. Turn off the pressure cooker and let its pressure fall back to normal, for 15-20 minutes.
Step 7
Serve cooked beef short ribs over mashed potatoes.
