Romaine-wrapped halibut fillets. Halibut fillets cooked in the oven and served on the bed of Romaine lettuce.Delicious!
- 2 halibut fillets,skinned and boned
- 1 small handful fresh cilantro,finely chopped
- freshly squeezed juice of 1 lime
- coconut oil
- Romaine lettuce leaves
- salt and freshly ground black pepper
Preheat oven to 425 F (210 C).
Grease a baking dish with coconut oil. Arrange halibut fillets in oiled baking dish. Bake for 20 minutes (until the fillets flakes with a fork).
Meanwhile,prepare the cilantro seasoning. In a mixing bowl,combine chopped cilantro,lime juice and seasoning. Stir well.
Remove cooked halibut fillets from the oven and , using a fork ,break into the chunks. In another bowl,combine halibut chunks and cilantro mixture. Toss well.
Scoop into Romaine lettuce leaves and serve.
