Roquefort-stuffed shrimp. Freshly cooked shrimp stuffed with delicious homemade creamy and spicy mixture. An excellent appetizer! Ready in 15 minutes!
Roquefort-Stuffed Shrimp
Ingredients
- 24 jumbo raw shrimp
- 3 oz (90 g) creame cheese
- 1 oz (30 g) Roquefort cheese, crumbled
- 1/2 teaspoon prepared mustard
- 1 teaspoon finely chopped scallions
- 1 cup finely chopped fresh parsley
Method
Step 1
Bring 8 cups (2 L) salted water to a boil in a large saucepan. Add raw shrimp and,when the water returns to a boil,cook for 3-5 minutes.
Step 2
Drain cooked shrimp,then shell them and devein. Split shelled shrimp down the spine about halfway through. Set aside and chill.
Step 3
Meanwhile,in a mixing bowl,mix the cheeses,mustard and scallions.
Step 4
Using a spatula,stuff cheese mixture into split backs of the shrimp. Roll the cheese side of the shrimp in freshly chopped parsley and serve immediately.
