Scrambled eggs with green onion recipe.

Basic scrambled eggs based egg recipe.Very easy to prepare.

Poached Eggs with Spinach and Cheese Recipe

Makes 4 servings


Ingredients: 10 oz (300 g) package frozen spinach,thawed, 1 tablespoon (15 ml) unsalted butter, salt and freshly ground black pepper, to taste, dash nutmeg, 1 tablespoon (15 ml) vinegar, 4 large eggs, 4 slices bread, French mustard, 2 tablespoons (30 ml) grated Parmesan cheese

Instructions: Cook the frozen spinach as directed.  Drain between two plates and chop, then return to the saucepan and toss with butter, salt, and black pepper, and nutmeg. Keep hot.
To poach the eggs: Heat about 2 inches (5 cm ) water in a large nonstick skillet. Add the vinegar; this helps the eggs to keep their shape. Brake an egg into a saucer, swirl the water with a wooden spoon, and slide the egg carefully into the center of the swirl. Immediately lift the white over the yolk 2-3 times. Add the other eggs in the same manner. After 4 minutes, the white should appear just set.

Remove the eggs carefully with a perforated spoon and transfer to a bowl of cold water, to release any vinegar and prevent further cooking. Toast the bread and cut with a cookie cutter to a size to hold the egg.

Arrange chopped spinach on the toast, make slight cavities to hold the poached eggs, and place the drained eggs in the hollows. Sprinkle with Parmesan cheese and place under a hot broiler until cheese is golden. Serve immediately.

Scrambled Eggs with Green Onion Recipe

Ingredients

  • 1 Basic Scrambled Eggs
  • 1/4 teaspoon dried tarragon
  • 2 tablespoons chopped green onion

Method

Step 1

Prepare Basic Scrambled Eggs, add tarragon to unbeaten eggs mixture. Beat until well blended. Stir in green onion. Continue according to recipe for making scrambled eggs.
