Corn and Cherry Tomato Salad Recipe

Makes 4 servings Ingredients: 1/4 cup (60 ml) plain low-fat yogurt, 2 tablespoons low-sodium ketchup, 1 teaspoon prepared yellow mustard, 2 green onions, chopped, 2 tablespoons snipped fresh dill, 2 cups fresh whole-kernel corn, 10 cherry tomatoes, cut into halves, 1 small green bell pepper, cored, seeded, and chopped, 4 large lettuce leaves

Instructions: In a large mixing bowl, combine the yogurt, ketchup, and yellow mustard. Mix well. Stir in the green onions and snipped fresh dill and set aside.

In a small saucepan, bring 2 cups (500 ml) unsalted water to a boil over medium-high heat. Add whole kernel corn and cook, uncovered, for 45 seconds or until just tender. Drain, using a colander, then rinse under cold running water. Drain again. Stir in the dressing, along with cherry tomatoes and green bell pepper. Toss well to mix.


Place fresh lettuce leaves on plates and top with corn mixture. Serve immediately.

Makes 4 servings

Ingredients: 3 cups diced vine-ripened tomatoes, 1/2 cup chopped fresh parsley, 1/4 cup chopped fresh mint leaves plus 2 tablespoons additional fresh parsley, 1/4 cup chopped yellow onion, 3 tablespoons olive oil, 3 tablespoons freshly squeezed lemon juice, salt and freshly ground black pepper, to taste

Instructions: In a large mixing bowl, combine all ingredients. Mix well. Cover and refrigerate for at least 2 hours. Remove chilled tomato salad from refrigerator and serve as a side dish.

Simple Cherry Tomato Salad Recipe

Ingredients

  • 15 cherry tomatoes, halved
  • bunch Lettuce leaves
  • 2 tablespoons olive oil
  • 3/4 oz (25 g) crumbled feta cheese
  • black olives, pitted
  • salt and freshly ground black pepper

Method

Step 1

In a mixing bowl, combine tomatoes, lettuce, black olives, and crumbled feta cheese. Stir well to combine.

Step 2

Sprinkle with salt and black pepper. Drizzle with olive oil. Stir again and serve.
