Plain Biscuits Recipe

Yield: 8-10 biscuits

Ingredients: 2 cups (500 ml) all-purpose flour, 1/2 teaspoon (3 ml) salt, 1 teaspoon (5 ml) baking powder, 2 teaspoons (10 ml) cream of tartar, 2 tablespoons (30 ml) unsalted butter or margarine, ¾ cup (180 ml) milk

Instructions: In a medium mixing bowl, combine all-purpose flour, salt, baking soda, and cream of tartar. Mix well. Rub the butter into the flour with the fingertips until the mixture resembles fine bread crumbs.

Pour in sufficient milk to make a soft dough. Turn the dough onto a lightly floured board and knead lightly until smooth. Roll out to 3/4-inch (2 cm) thickness and cut into rounds with floured cutter. Grease a baking sheet with nonstick cooking spray. Place the biscuits on the greased baking sheet. Glaze with a little milk and bake in the preheated oven (400º F (200º C)) for 12-15 minutes or until biscuits are golden.

Place baked biscuits on a wire cooling rack. When cool, break in half and spread with butter or serve with strawberry jam and whipped cream.

Variations:

Fruit Biscuits Recipe:

Before adding the milk add ½ cup (125 ml) seedless white raisins and 2 tablespoons (30 ml) granulated sugar.

Cheese Biscuits Recipe:

Before adding the milk, add ½ cup (125 ml) grated Cheddar cheese.

Wholewheat Biscuits Recipe:

Substitute 1 cup (250 ml) wholewheat flour for 1 cup (250 ml) of the all-purpose flour.

Note: The biscuit dough may also be shaped into a circle, marked into 6-8 wedges, and baked in preheated (450º F (225º C)) oven for 20-30 minutes.

Ingredients

  • 1/4 cup (60 ml) unsalted butter
  • 1/4 cup (60 ml) sugar
  • 1/2 cup (125 ml) cooked mashed pumpkin
  • 1 large egg, beaten
  • 1/3 cup (80 ml) milk
  • 2½ cups (625 ml) all-purpose flour, sifted with 3 teaspoons (15 ml) baking powder

Method

Step 1

In a small mixing bowl, combine the butter and sugar. Beat until smooth. Add mashed pumpkin and mix well. Add beaten egg and mix in the milk a little at a time. Add the sifted flour and mix to a soft dough.

Step 2

Turn onto a floured board and knead lightly. Roll out to 3/4-inch (2 cm) thickness, then cut into rounds with a floured cutter.

Step 3

Place the rounds on a greased baking sheet. Preheat the oven to 400 F (200 C). Glaze the round with milk and bake in preheated oven for 20 minutes.

Step 4

Turn off the oven. Turn baked biscuits onto a wire cooling rack. When cool, break open and spread with butter.
