Shrimp Skewers with Garlic-LIme Marinade Recipe

Makes 6 servings
Ingredients: 1 pound (480 g) raw shrimp, peeled and deveined, 3 cloves garlic, peeled and thinly sliced, 2 tablespoons (30 ml) extra-virgin olive oil, 1/4 cup (60 ml) freshly squeezed lime juice, 1/4 teaspoon each: kosher salt, freshly ground black pepper, paprika, 1/4 cup finely chopped fresh cilantro, bamboo skewers soaked in water

For Dipping Sauce: 1/2 cup (125 ml) Plain Greek yogurt, 1/2 teaspoon each: garlic and onion powders, 1/4 teaspoon each: kosher salt and freshly ground black pepper, 2 tablespoons each: fresh Italian parsley, chopped chives, and freshly squeezed lime juice

Instructions: In a medium mixing bowl, combine olive oil, lime juice, salt, black pepper, and paprika. Whisk well and set aside.

Thread shrimp onto soaked bamboo skewers, about 5-6 shrimp per skewer. Place shrimp skewers on a plate and pour the marinade over.

To Grill Shrimp: Lightly grease with oil or nonstick cooking spray grates of a grill and set to medium heat. Add shrimp skewers to the preheated grill and cook for about 2 minutes per side, basting occasionally with some extra marinade.


Turn off the grill. Remove grilled shrimp from the grill and transfer to a serving plate. Serve hot.

You can also roast shrimp in an oven. To Roast in the Oven:

Preheat the oven to 450º F (225º C). Arrange shrimp skewers on a lightly greased baking sheet. Roast in the preheated oven for about 5 minutes or until pink and opaque. Turn off the oven and remove roasted shrimp. Transfer to a serving plate. Sprinkle with chopped fresh cilantro. Serve immediately.

Skewered Shrimp with Fruit Recipe

Ingredients

  • 1 pound (480 g) large raw shrimp,peeled and deveined
  • 1/2 cup (125 ml) freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon hot pepper flakes
  • 25-30 chunks orange (optional)
  • 25-30 wedges kiwifruit (optional)
  • 25-30 chunks pineapple (optional)

Method

Step 1

Place shrimp in a heavy plastic bag set in a bowl. Pour in freshly squeezed lime juice, oil, and hot pepper flakes. Tighten bag around shrimp, removing as much air as possible. Turn bag several times to coat shrimp with marinade. Refrigerate for 1 hour.

Step 2

Remove shrimp from marinade; broil or barbecue over medium-high heat for about 3 minutes on each side or until shrimp are opaque and bright pink. Serve hot or cold, skewered on wooden picks with pineapples, oranges or kiwifruit chunks.
