Slow Cooker Alphabet Chicken Soup Recipe

Ingredients

  • 8 cups (2 L) reduced-sodium fat-free chicken broth
  • 1 pound (480 g) boneless and skinless chicken breast, sliced
  • 1/2 cup chopped yellow onion
  • 1/2 cup sliced carrots
  • 1/2 cup sliced celery
  • 1 large clove garlic, peeled and minced
  • 1 bay leaf
  • 1/2 teaspoon dried thyme leaves
  • 1/8 teaspoon celery seeds
  • 1/2 cup uncooked alphabet pasta
  • salt and freshly ground black pepper, to taste

Method

Step 1

In 6-quart (6L) slow cooker, combine all ingredients, except pasta and seasoning. Stir well.

Step 2

Cover the pot and cook on low-heat setting for 6-8 hours, adding the pasta during the last 20 minutes.

Step 3

Turn off the cooker and open the lid. Discard bay leaf. Season to taste with salt and black pepper.

Step 4

Ladle into soup bowls. Serve hot.
