What are the ingredients for cheesy chicken chowder?

This dish is perfect for a cold winter day. It’s easy to make, delicious and has healthy ingredients.

I usually go with rotisserie chicken for this recipe but you can use any kind of cooked chicken you like. I typically get the pre-cooked chicken from the grocery store deli because it’s already seasoned and all I need to do is chop it up or shred it. If you want to use uncooked chicken, you’ll need to season it before putting it in the slow cooker.

Next up are vegetables like celery, onion, potatoes, and carrots that will be sautéed in butter or oil before they go into the slow cooker with some garlic and thyme. You’re also going to want some flour (which will thicken up the soup) crushed garlic, etc

Slow Cooker Cheesy Chicken Chowder

Ingredients

  • 1 ½ cups (370 ml) low-sodium fat-free chicken broth
  • 2 cans (17 oz (510 ml) )) cream-style corn
  • 1 pound (480 g) boneless and skinless chicken breasts, cubed
  • 1/2 cup finely chopped yellow onion
  • 1 ½ cups (370 ml) 2% reduced-fat milk
  • 2 tablespoons cornstarch
  • 1 ½ cups shredded, reduced-fat pepper-jack cheese
  • salt and coarsely ground black pepper to taste

Method

Step 1

In a slow cooker, combine chicken broth, corn, cubed chicken breasts, and onion. Mix well.

Step 2

Cover the slow cooker and cook on a high-heat setting for 4-5 hours.

Step 3

Stir in combined milk and cornstarch, stirring 2-3 minutes. Add cheese and stir well until melted. Season to taste with salt and black pepper.

Step 4

Turn off the slow cooker. Ladle soup into soup bowls and serve immediately.
