How To Make Veal Meatballs

makes 8 large meatballs

Ingredients: 1½ pounds (720 g) ground veal ( alternately,ground chicken, pork, or beef can be substituted for the veal in this recipe), 1/4 cup (60 ml)finely chopped green onions, 1 clove garlic, peeled and minced, large eggs, beaten, 1/4 cup (60 ml) chicken broth, 1/2 cup (125 ml) unseasoned dry breadcrumbs, 1 teaspoon (5 ml) salt, 1/4 teaspoon (1 ml) freshly ground black pepper


Instructions: In a large mixing bowl, combine all meatball ingredients. Mix well, then, using your hands, shape into 8 large meatballs. Wrap with a plastic wrap and refrigerate until ready to use.

Slow Cooker Creamy Veal Meatballs Recipe

Ingredients

  • veal meatballs, see recipe above
  • 1/2 cup (125 ml) chicken broth
  • 1 cup (250 ml) reduced-fat sour cream
  • 3 tablespoons cornstarch
  • salt and freshly ground black pepper, to taste
  • mashed potatoes or cooked fettuccine, warm

Method

Step 1

Place meatballs in the bottom of the slow cooker. Pour chicken broth over.

Step 2

Cover the pan and cook on low-heat setting for 5-6 hours.

Step 3

Turn off the slow cooker and open the lid. Remove cooked meatballs from the cooker, reserving the cooking liquid. Set meatballs aside and keep warm.

Step 4

In a small mixing bowl, combine cornstarch and sour cream. Mix until cornstarch is dissolved completely. Stir the sour cream mixture into reserved liquid. Season to taste with salt and black pepper.

Step 5

Serve cooked meatballs and sauce over mashed potatoes or cooked fettuccine.
