Ingredients: 1/2 cup chopped green onions,1/4 cup snipped fresh cilantro, 1 large egg, lightly beaten, 1 fresh Serrano chili pepper, seeded and finely chopped, 4 cloves garlic, peeled and minced, 1 teaspoon salt, 1 teaspoon ground coriander, 1 teaspoon crushed fennel seeds, 1/2 pound (240 g) hot sausage

Instructions: In a large mixing bowl, combine all meatball ingredients. Stir in sausages and mix well. Shape the sausage mixture into 36 meatballs.

Slow Cooker Curried Coconut Meatballs Recipe

Ingredients

  • 1 tablespoon toasted sesame oil
  • 1 recipe Meatablls (see recipe above)
  • 14Β½ oz (435 ml) can reduced sodium fat-free chicken broth
  • 14Β½ oz (435 ml) unsweetened coconut milk
  • 3/4 cup Asian sweet chili pepper
  • 1-2 tablespoons curry powder
  • 1 tablespoon quick-cooking tapioca
  • 3 cups cooked rice

Method

Step 1

Heat the olive oil in a large nonstick skillet over medium heat. Add prepared meatballs, half at a time. Cook until brown on all sides. Drain off fat.

Step 2

In a 4-quart (4 L) slow cooker combine chicken broth, coconut milk, chili sauce, curry powder, and quick-cooking tapioca. Mix well, then carefully stir in fried meatballs.

Step 3

Cover the pot and cook on a low-heat setting for 4-5 hours.

Step 4

Turn off the cooker and open the lid. Stir the meatball mixture well before serving. Serve over cooked rice.
