Slow Cooker Curried Coconut Meatballs Recipe
Ingredients
- 1 tablespoon toasted sesame oil
- 1 recipe Meatablls (see recipe above)
- 14Β½ oz (435 ml) can reduced sodium fat-free chicken broth
- 14Β½ oz (435 ml) unsweetened coconut milk
- 3/4 cup Asian sweet chili pepper
- 1-2 tablespoons curry powder
- 1 tablespoon quick-cooking tapioca
- 3 cups cooked rice
Method
Step 1
Heat the olive oil in a large nonstick skillet over medium heat. Add prepared meatballs, half at a time. Cook until brown on all sides. Drain off fat.
Step 2
In a 4-quart (4 L) slow cooker combine chicken broth, coconut milk, chili sauce, curry powder, and quick-cooking tapioca. Mix well, then carefully stir in fried meatballs.
Step 3
Cover the pot and cook on a low-heat setting for 4-5 hours.
Step 4
Turn off the cooker and open the lid. Stir the meatball mixture well before serving. Serve over cooked rice.
