Slow Cooker Ham and Scalloped Potatoes Recipe
Ingredients
- 2 tablespoons olive oil
- 28 oz (840 ml) package frozen hash brown potatoes
- 10 oz (300 g) diced cooked ham
- 1/4 teaspoon freshly ground black pepper
- 11 oz (330 ml) can condensed cheddar cheese soup
- 3/4 cup (180 ml) milk
- 1 tablespoon chopped fresh parsley
Method
Step 1
In a medium nonstick skillet, heat olive oil over medium heat. Add diced ham and brown, stirring occasionally.
Step 2
Remove browned meat from the skillet and transfer to a 4-quart (4 L) slow cooker. Add frozen potatoes, sprinkle with black pepper and mix well.
Step 3
In a medium mixing bowl, combine cheddar soup and milk. Stir well and pour the milk mixture over potatoes and ham.
Step 4
Cover the pot and cook on low-heat setting for 7-9 hours.
Step 5
Turn off the slow cooker and open the lid. Stir in chopped fresh parsley. Serve hot.
