Slow Cooker Healthy Vegetable Stew Recipe
Ingredients
- 2 cups (500 ml) vegetable broth
- 1/2 pound (240 g) sliced mushrooms
- 1/2 pound (240 g) cubed potatoes
- 2 medium yellow onions, peeled and diced
- 2 cloves garlic, peeled and minced
- 2 large carrots, peeled and cubed
- 1 teaspoon dried savory leaves
- 1 bay leaf
- salt and freshly ground black pepper, to taste
Method
Step 1
In 4-6-quart (4-6 L)r, combine all ingredients, except seasoning. Stir well.
Step 2
Cover the pot and cook on low-heat setting for 6-8 hours or until vegetables are tender.
Step 3
Turn off the slow cooker and open the lid. Discard bay leaf. Season the stew with salt and black pepper, then mix well.
Step 4
Transfer vegetable stew to serving plates. Serve hot.
