Slow Cooker Spoon Bread Recipe

Cornmeal bread baked in 6-quart (6 L) slow cooker.


makes 6-8 servings

Ingredients: 3/4 cup (180 ml) boiling water, 1/2 cup yellow cornmeal, 2 teaspoons unsalted butter at room temperature, 2 egg yolks, 1/3 cup (80 ml) reduced-fat buttermilk, 1/2 teaspoon salt, 1/2 teaspoon granulated sugar, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, 2 egg whites, beaten to stiff peaks

Instructions: In a large dip bowl, combine water and cornmeal. Stir well, then set aside and let cool, stirring occasionally. When cooled, stir in butter and egg yolks, blending well.

Mix in buttermilk and combined dry ingredients. Fold in beaten egg whites.

Pour batter into greased 7-inch (18.5 cm) springform pan. Arrange pan on rack in 6-quart (6 L) slow cooker. Cover and cook on high heat setting for 2½-3 hours or until a toothpick inserted in the center comes out clean.

Turn off slow cooker. Open the lid and remove baked bread. Serve immediately.

Slow Cooker Skinny Cornbread Recipe

Ingredients: 1¼ cups all-purpose flour, 3/4 cup cornmeal, 1/4 cup granulated sugar,1 teaspoon each: baking powder, baking soda, seasoned salt, 1 cup (250 ml) nonfat buttermilk, 1/4 cup (60 ml) low-cholesterol egg substitute, 1/4 cup (60 ml) canola oil

Instructions: Preheat 3-quart (3L) slow cooker on high-heat setting. In a large mixing bowl, combine all-purpose flour, baking soda, and seasoned salt. Stir well. Make well in the center of dry mixture. pour in buttermilk, egg substitute, and canola oil. Mix in dry ingredients until moistened.

Pour buttermilk mixture into greased 2-quart (2 l) souffle pan. Cover with aluminum foil. Arrange batter on a metal trivet in the preheated slow cooker. Cover and cook on low-heat setting for 3-4 hours or until a knife inserted into the center comes out clean.

Slow Cooker Healthy Whole Wheat Bread Recipe

Ingredients

  • 2 cups (500 ml) warm reconstituted powdered milk
  • 2 tablespoons vegetable oil
  • 1/4 cup clear honey
  • 3/4 teaspoons salt
  • 1 package yeast
  • 2 ½ cups (625 g) whole wheat flour
  • 1 ¼ cups (300 g) white flour

Method

Step 1

Mix together milk, oil, honey or brown sugar, salt, yeast, and half the flour in electric mixer bowl. Beat with mixer for 2 minutes.

Step 2

Add remaining flour. Mix well.

Step 3

Place dough in well-greased bread or cake pan that will fit into your slow cooker. Cover with greased tin foil. Let stand for 5 minutes.

Step 4

Place in slow cooker. Cover cooker and bake on High 2½-3 hours.

Step 5

Remove pan and uncover. Let stand for 5 minutes. Serve warm.
