Slow Cooker Salmon Loaf with Cucumber Dill Sauce Recipe
Ingredients
- 7 ½ oz (225 ml) can salmon, drained
- 1 cup whole-wheat breadcrumds
- 1/4 cup chopped green onions
- 1/4 cup (60 ml) milk
- 1 large egg, beaten
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons capers
- 1 tablespoon dried dill weed
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- cucumber sauce (recipe follows)
- For Cucumber Dill Sauce:
- 1/2 cup (125 ml) low-fat plain yogurt
- 1/2 cup chopped cucumber
- 1/2 teaspoon dill weed
- salt and ground white pepper to taste
