Slow Cooker Sherried Beef and Mushroom Stew Recipe

Ingredients

  • 2 cups mushrooms
  • 1 pound (480 g) potatoes, peeled and cubed
  • 1 pound (480 g) beef stew meat, cubed
  • 6 cups (1.5 L) beef broth
  • 1/2 cup (125 ml) dry sherry
  • salt and freshly ground black pepper, to taste

Method

Step 1

In a 6-quart (6 L) slow cooker, combine mushrooms and potatoes. Stir well. Top with cubed beef. Pour beef broth and dry sherry over.

Step 2

Cover the pot and cook on low-heat setting for 8-10 hours or until meat and vegetables are tender.

Step 3

Turn off the slow cooker and open the lid. Stir the stew well before serving. Ladle into large soup bowls. Serve hot.
