Slow Cooker Spicy Pumpkin Soup Recipe
- 15 oz (450 ml) can pumpkin
- 1 cup chopped celery
- 1/2 cup pureed carrots
- 1/2 cup minced onion
- 1/4 teaspoon salt
- 1/2 teaspoon dried oregano, crushed
- 1/2 teaspoon dried rosemary, crushed
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground ginger
- 2 14 oz (420 ml) each vegetable broth
- 1/4 cup (60 ml) whipped cream
- toasted pumpkin seeds
In a 4-quart (4 L) slow cooker, combine all ingredients, except pumpkin seeds and whipped cream. Stir well.
Cover the pot and cook on low-heat setting for 6-8 hours.
Turn off the cooker and open the lid. Stir well before serving. Ladle into soup bowls.
Stir in whipped cream (optional). Sprinkle with pumpkin seeds and serve.
