Slow Cooker Turkey Stock Recipe

This is the perfect ending for a Thanksgiving turkey.

makes 4 quarts (4 L)

Ingredients: 4 quarts (4 L) water, 1 cup (250 ml) dry white wine, 1 turkey carcass, cut up, 2 thickly sliced medium yellow onions, 2 leeks, thickly sliced (white parts only) 4 medium carrots, peeled and thickly sliced, 4 ribs celery, sliced, 1 teaspoon dried thyme leaves, 10 black peppercorns, 6 sprigs fresh parsley, salt and freshly ground black pepper, to taste

Instructions: In a 6-quart (6 l) slow cooker, combine all ingredients, except seasoning. Cover cooker and cook on low-heat setting for 6-8 hours. Turn off the slow cooker. Strain turkey stock through a double layer of cheesecloth, discarding solids. Season stock to taste with salt and black pepper. Stir well, set aside, and allow cooling. Cover and refrigerate until chilled completely. Remove from refrigerator and remove fat from the surface of the stock. Use it as a base for Slow Cooker Turkey Noodle Soup Recipe

Instructions: In a slow cooker, combine all ingredients, except seasoning. Cover the cooker and cook on a high-heat setting for 4-6 hours. Turn off and open the slow cooker. Season to taste with salt and black pepper. Stir well. Ladle turkey soup into soup bowls. Serve hot.

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 1 tablespoon minced garlic
  • 3/4 teaspoon dried marjoram leaves
  • 1 teaspoon dried thyme leaves
  • 4 oz (120 g) egg noodles, cooked
  • 4 cups cooked diced turkey
  • salt and freshly ground black pepper

Method

Step 1

In a 6-quart (6 L) slow cooker, combine all ingredients, except cooked noodles, turkey, and seasoning. Cover the cooker and cook on a high-heat setting for 3-4 hours, adding noodles, and turkey, during the last 15 minutes.

Step 2

Turn off and open the slow cooker. Season turkey soup with salt and black pepper. Stir well.

Step 3

Ladle soup into soup bowls. Serve hot.
