Slow cooker turkey noodle soup recipe. Turkey stock-based soup with vegetables and herbs. Very easy and healthy! You can prepare turkey stock in a slow cooker.

Slow Cooker Turkey Stock Recipe

This is the perfect ending for a Thanksgiving turkey.

makes 4 quarts (4 L)

Ingredients: 4 quarts (4 L) water, 1 cup (250 ml) dry white wine, 1 turkey carcass, cut up, 2 thickly sliced medium yellow onions, 2 leeks, thickly sliced (white parts only) 4 medium carrots, peeled and thickly sliced, 4 ribs celery, sliced, 1 teaspoon dried thyme leaves, 10 black peppercorns, 6 sprigs fresh parsley, salt and freshly ground black pepper, to taste

Instructions: In 6-quart (6 l) slow cooker, combine all ingredients, except seasoning. Cover cooker and cook on low-heat setting for 6-8 hours. Turn off slow cooker. Strain turkey stock through a double layer of cheesecloth, discarding solids. Season stock to taste with salt and black pepper. Stir well, set aside and allow cooling. Instructions: In a slow cooker, combine all ingredients, except seasoning. Cover cooker and cook on high-heat setting for 4-6 hours. Turn off and open the slow cooker. Season to taste with salt and black pepper. Stir well. Ladle turkey soup into soup bowls. Serve hot.

Ingredients

  • 2½ quarts (2½ L) turkey stock
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 1 tablespoon minced garlic
  • 3/4 teaspoon dried marjoram leaves
  • 1 teaspoon dried thyme leaves
  • 4 oz (120 g) egg noodles, cooked
  • 4 cups cooked diced turkey
  • salt and freshly ground black pepper

Method

Step 1

In 6-quart (6 L) slow cooker, combine all ingredients, except cooked noodles, turkey, and seasoning. Cover the cooker and cook on high-heat setting for 3-4 hours, adding noodles, and turkey, during the last 15 minutes.

Step 2

Turn off and open the slow cooker. Season turkey soup with salt and black pepper. Stir well.

Step 3

Ladle soup into soup bowls. Serve hot.
