Slow Cooker Zesty Tomato Soup Recipe

Ingredients

  • 1/2 oz (15 g) chopped fresh basil
  • 2 pounds (960 g) fresh tomatoes, chopped
  • 1½ oz (45 ml) unsalted butter (vegan dairy free butter)
  • 3 garlic cloves, peeled and minced
  • 1 medium yellow onion, peeled and chopped
  • 1 medium carrot, peeled and chopped
  • 3 tablespoons tomato puree
  • 1½ cups (400 ml) vegetable stock

Method

Step 1

In a 4-6-quart (4-6L) slow cooker, combine all ingredients. Mix well.

Step 2

Cover the pot and cook on high-heat setting for 3-4 hours or until vegetables are tender.

Step 3

Turn off the cooker and open the lid. Working in batches, blend the soup in a blender or food processor until smooth, adding more vegetable stock in the soup if it is too thick.

Step 4

Ladle the soup into soup bowls. Garnish each bowl with fresh basil leaves. Serve hot.
