Stilton Pork Chops with Apple Sage

- 4 pork chops
- sea salt and freshly ground black pepper ,to taste
- 1 tablespoon olive oil
- 2 granny Smith apples,unpeeled,cored and sliced into wedges
- 1 tablespoon butter
- a few fresh sage leaves
- 3½ oz (100g) Stilton cheese,crumbled
Preheat the oven to 400 F (200 C).
Slash the pork fat along the edge of the chops all the way to the meat. Season meat with salt and black pepper on both sides.
In a large nonstick skillet,heat olive oil over medium-high heat. Add seasoned pork chops and cook until golden brown (for3-5 minutes).
Remove cooked pork chops from the heat and set aside.
Add butter and apples to the pan. Fry ,stirring ,until golden.
Top each pork chop with cooked apples. Place sage leaves over top.
Place pork chops into preheated oven and roast for 4-5 minutes.
Remove meat from the oven. Spread crumbled Stilton cheese over the top of meat. Return to the oven and cook until cheese melted.
