Stiffed Plums Wrapped in Bacon

Ingredients

  • 6 slices bacon, cut into halves
  • 12 dried plums, pitted
  • 1/4 teaspoon salt
  • 1/4 cup(60 g) finely chopped celery
  • 1 slice lemon
  • 1/8 teaspoon cayenne pepper
  • 2/3 oz (20 ml) freshly squeezed lemon juice
  • 3 oz (90 g) cream cheese
  • 2 cooked artichoke hearts,finely chopped

Method

Step 1

In a bowl, cover dried plums with water, add lemon slice and soak overnight. Drain soaked plums and pat dry with paper towels.

Step 2

In a mixing bowl, combine remaining ingredients, except bacon. Mix well and stuff artichoke mixture into the dried plums.

Step 3

Wrap bacon half around each stuffed plum. Secure with toothpicks.

Step 4

Preheat oven to 380 F (190 C). Grill stuffed plums until the bacon is crisp (about 10 minutes).

Step 5

Serve stuffed plums wrapped in bacon hot.
