Turbo oven-baked Cajun chicken breasts recipe. Chicken breasts with sweet potatoes and cajun spices baked in a turbo (halogen) oven. Very easy and simple chicken breast recipe.

How To Prepare Cajun Chicken Breasts in Turbo (Halogen) Oven

Makes 4 servings

Ingredients: 6 sweet potatoes, 2 red onions, olive oil, a dash of paprika, sea salt, and freshly ground black pepper, to taste, 4-6 boneless and skinless chicken breasts, 2-3 tablespoons (30-45 ml) Cajun seasoning, 1/2 oz (15 ml) honey, freshly squeezed juice of 1 lime, zest of 1 lime

Instructions: Peel red potatoes and onions, then cut them into cubes. Place vegetables in an ovenproof dish and sprinkle with olive oil. Season with paprika, sea salt, and black pepper.

Preheat the turbo (halogen) oven to 400º F (200ºC). Place seasoned vegetables on the high rack and cook in a preheated oven for 10 minutes.

Meanwhile, score chicken breasts with a sharp knife. In a small mixing bowl, combine Cajun seasoning, honey, lime juice, and zest. Mix well. Pour the sauce over the chicken breasts.

Remove the tray with cooked vegetables from the oven. Add chicken breasts together with the Cajun sauce to the vegetables.

Return the high rack to the turbo oven and cook for a further 15-20 minutes or until the chicken is tender. Serve turbo oven-baked Cajun chicken breasts with cooked vegetables and a green salad.

Ingredients

  • 6 sweet potatoes, peeled and cut into cubes
  • 2 red onions, peeled and cut into cubes
  • olive oil
  • dash of paprika
  • sea salt
  • freshly ground black pepper
  • 4-6 boneless and skinless chicken breasts
  • 2-3 tablespoons cajun spice
  • 1 tablespoon clear honey
  • juice and zest of 1 lime

Method

Step 1

In an ovenproof dish, combine sweet potatoes and onions. Sprinkle with olive oil and season with salt, black pepper, and paprika.

Step 2

Preheat turbo oven to 400 F (200 C). Bake vegetables in preheated oven for 10 minutes or until vegetables are tender.

Step 3

In a small mixing bowl, combine cajune spice, honey, lime juice, and zest. Mix well. Dip chicken breasts in the Cajun marinade and turn to coat well.

Step 4

Remove the tray with baked vegetables from the oven. Add chicken breasts together with marinade to cooked vegetables. Return the rack to the turbo oven and cook for further 15-20 minutes.
