Ingredients
- 2 teaspoons olive oil
- 2 pounds (960 g) boneless and skinless chicken breasts
- 3 cloves garlic, peeled and minced
- 4 cups (2 l) low-sodium chicken broth
- 1 pound (480 g) uncooked rotini pasta
- 1½ basil pesto sauce
Method
Step 1
Heat the olive oil in an electric instant pot turned to saute mode. Add chicken breasts and saute, turning, for about 2 minutes. Add garlic and continue cooking for a further 1 minute, or until garlic is fragrant.
Step 2
Using a wooden spatula, deglaze the bottom of the cooker, by adding a small amount of chicken broth. Be sure there is no food stuck to the bottom.
Step 3
Pour in the remaining chicken broth, then add uncooked rotini in an even layer. Presse the pasta down until most of it is submerged in the broth.
Step 4
Close the pot and lock the lid. Set the machine to cook at high pressure. Set the timer to cook for 3 minutes.
Step 5
Usinf]g the Quick Release method, bring pressure to normal. Carefully unlock and open the lid. Stir chicken and pasta well.
Step 6
Stir in the pesto. Serve hot.
