Ingredients

  • 1/2 cup all-purpose flour
  • 1½ teaspoons freshly ground black pepper
  • 2 large eggs, beaten
  • 2/3 cup unsweetened flaked cocnut
  • 1/3 cup Panko breadcrumbs
  • 12 oz (360 g) raw shrimp, peeled and deveined
  • 1/4 teaspoon kosher salt

Method

Step 1

In a small mixing bowl, combine all-purpose flour and black pepper. Mix well and set aside.

Step 2

In another small mixing bowl, combine coconut and breadcrumbs. Stir well.

Step 3

Holding each shrimp by the tail, dredge in flour mixture, then shake off excess. Dip floured shrimp in beaten egg and allow any excess drip off. Dredge in coconut mixture, pressing to adhere. Transfer shrimp to a large plate.

Step 4

Preheat your air fryer to 400° F (200° C). Place half of the shrimp in a single layer in the air fryer basket. Cook for 3 minutes, then flip and continue cooking for a further 3 minutes or until golden brown. Season with 1/4 teaspoon salt. Repeat with remaining shrimp.

Step 5

Remove fried coconut shrimp from the fryer. Serve hot with your favorite dipping sauce.
