- 7 oz (210 g) dates
- 10 oz (300 ml) tea
- 5²⁄³ oz(175 g) self-raising flour
- 1 teaspoon baking powder
- 1 pound (480 g) dried mixed fruits
- grated rind of 1 orange
- 1 tablespoon freshly squeezed orange juice
- 2 teaspoons mixed spice
Place low grilling rack in turbo oven. Set oven temperature to 338°F (170°C).
In a large saucepan,combine dates and tea. Gently heat until dates are soft. Remove the pan from the heat and mash to break up the dates.
In a large mixing bowl,combine the flour and baking powder. Add dried fruits,orange rind,orange juice and mix well. Add the date mixture and stir well.
Lightly grease with oil a cake tin. Spoon the cake mixture into cake tin.Level the top. Arrange cake tin on lower rack of turbo oven. Cover and cook for 40-45 minutes.Then reduce a heat to 302°F (150°C) and cook for 20-20 minutes more.
Place baked fruit cake on a cooling rack to cool. Serve sliced.
