How to Prepare Baked Green Bean Casserole Recipe

Makes 8 servings

Ingredients: For the Topping: 2 medium yellow onions, 1/4 cup (60 ml) almond flour, 1/4 teaspoon (1 ml) sea salt, For Beans: 1 pound (480 g) fresh green beans, 2 tablespoons (30 ml) olive oil, 3/4 pound ( 360 g) ground beef, 2 cloves garlic, 2 tablespoons (30 ml) arrowroot flour ( the perfect gluten-free baking substitute or sauce thickener), 1 cup (250 ml) warm homemade low-sodium and fat free chicken broth, 1 cup (250 ml) warmed almond milk, 1/4 teaspoon (1 ml) freshly ground nutmeg, salt and freshly ground black pepper, to taste, shredded Parmesan cheese

Instructions: Preheat the oven to 400º F (200º C). Peel and thinly sliced the yellow onion, then place onion slices in a large mixing bowl. Add the almond flour and salt. Toss well to coat and set aside.

Line a baking sheet with a parchment paper. Evenly spread seasoned onions on the pan. Place the pan on the middle rack of the preheated oven and bake until golden brown, tossing 2-3 times during the cooking.

Remove baked onions from the oven and set aside.

Meanwhile, prepare beans: Wash green beans under cold running water and trim. Add trimmed green beans to 3-4-quart (3-4 l) pot of very well salted boiling water, and cook for 5 minutes over medium-high heat.

Remove the pot from the heat. Drain cooked beans and transfer to a large bowl filled with ice water.

Peel and mince garlic. In a large nonstick skillet, heat the olive oil over medium heat. Add ground beef and cook, stirring occasionally gro 3-5 minutes or until golden brown. Add minced garlic and ground nutmegs and cook, stirring, for further 30 seconds. Sprinkle the arrowroot flour over the mixture and continue cooking and stirring until golden.

Pour in the chicken broth and almond milk and mix well to combine. Reduce heat to low and cook until the mixture thickens, stirring occasionally, for about 6-8 minutes. Remove d vegetable mixture from the heat and stir in 1/4 of reserved onions and green beans. Season with salt and black pepper, to taste.

Top with remaining onions. Place in the preheated oven and bake for 15 minutes.

Turn off the oven and remove baked green bean casserole. Transfer to a serving platter. Serve immediately.

  • 1/4 cup almond flour
  • 1/4 teaspoon salt
  • 1 pound (480 g) green beans, trimmed
  • 2 tablespoons olive oil
  • 12 oz (360 g) ground beef
  • 2 cloves garlic, peeled and minced
  • 2 tablespoons arrowroot flour
  • 1 cup (250 ml) chicken broth
  • 1 cup (250 ml) warmed almond milk
  • 1/4 teaspoon ground nutmeg
  • salt and freshly ground black pepper, to taste
  • Parmesan cheese

 

Method

Step 1

Heat an oven to 400 F (200 C).

Step 2

In a large mixing bowl, combine sliced onions, almond flour, and salt. Toss well to coat.

Step 3

Line a baking sheet with a parchment paper. Evenly spread seasoned onions on the pan. Place the pan on the middle rack of the oven. Bake until onions are golden brown, tossing 2-3 times during cooking.

Step 4

Remove baked onions from the oven. Set aside and keep warm.

Step 5

Preheat a large pot of salted water over medium-high heat. Add beans and cook for about 5 minutes.

Step 6

Drain cooked beans, using a colander. Transfer to a large bowl of ice water. Allow cooling completely.

Step 7

In a large nonstick skillet, heat olive oil over medium heat. Add ground beef and cook, stirring occasionally, for 4-5 minutes. Stir in the garlic and nutmeg and cook for a further 30 seconds. Sprinkle the arrowroot flour over the vegetable mixture and stir until golden.

Step 8

Pour in the chicken broth and almond milk. Stir well to combine. Reduce the heat to low and cook, stirring occasionally, for about 6-8 minutes.

Step 9

Remove the skillet from the heat. Stir in 1/4 of the onions and green beans, then season with salt and pepper. Put remaining onions on top.

Step 10

Place in preheated oven and bake for 15 minutes. Turn off the oven and remove baked casserole. Sprinkle with shredded Parmesan cheese. Transfer to a serving platter. Serve immediately.
