Baked madeleines with cinnamon.Famous French madeleines baked in oven.Very tasty dessert!

Ingredients

  • 6 oz (180 g) all-purpose flour
  • 3 oz (90 g) butter
  • 1 tablespoon caster sugar
  • 1 egg yolk
  • For Filling:
  • 4 oz (120 g) butter
  • 4 oz (120 g) caster sugar
  • 2 eggs,beaten
  • 2 oz (60 g) ground almonds
  • 1/4 teaspoon almond essence
  • 4 oz (120 g) self-raising flour
  • 1 teaspoon ground cinnamon
  • milk to mix
  • apricot to mix
  • 1 tablespoon icing sugar

Method

Step 1

Sift flour into small bowl and rub in fat. Stir in sugar,egg yolk and enough water to bind to a soft dough. Roll out to 1/2-inch 6 mm) thickness and use to line 2 madelein sheets. Trim the edges and chill for 30 minutes.

Step 2

Set the oven temperature to 375°F (190°C).

Step 3

For filling,cream butter with all but 1 tablespoon caster sugar. Gradually stir in beaten eggs,then mix in almonds and almond essence. Stir in flour and cinnamon and fold in with enough milk to give a soft dropping consistency. Put 1/2 teaspoon jam into each pastry case,then spoon filling into each case.

Step 4

Bake for 15-20 minutes until filling is golden. Cool baked madeleines with cinnamon on a wire rack. Mix icing sugar and remaining caster sugar together and sift over tartlets before serving.
