Baked Onion Quiché
Ingredients
- 1 pound (480 g) medium-size onions, peeled and thinly sliced
- 2 oz (60 g) lard
- 4 oz (120 g) smoked streaky bacon, diced
- 6 oz (180 g) shortcrust pastry
- 3 large eggs, beaten
- 5 oz (150 ml) milk
- 5 oz (150 ml) single cream
- salt and freshly ground black pepper,to taste
Method
Step 1
Preheat the oven to 400 F (200 C).
Step 2
Melt the lard in a frying pan. Add sliced onion and cook over medium-high heat until golden.
Step 3
Add diced bacon to the pan and fry for a further 4-5 minutes, or until onions and bacon golden brown.
Step 4
Roll out the dough and use it to line 8½-inch (22 cm) flan dish. Prick the bottom and bake blind for 15-20 minutes.
Step 5
Remove foil and baked beans. Spread onion and bacon mixture over the pastry base.
Step 6
In a mixing bowl, combine beaten eggs, milk, and cream. Mix well and season to taste with salt and black pepper.
Step 7
Pour egg mixture over the onions.
Step 8
Bake in preheated oven for 25 minutes, or until lightly set and golden.
Step 9
Serve baked onion Quiché hot with mixed salads.
