A little butter goes a long way toward making a variety of foods to taste better. Spread on a sandwich, melting atop a succulent steak, or dripping over a steaming corn cob, butter adds a special touch. The trick is to use it to the best advantage, and not abuse it since butter is about 82% animal fat.
Butter can be bought unsalted (“sweet”), half-salted, and salted. The seasoned butter recipes I give here use salted butter. If you use the unsalted variety, as a rule, remember to add a little salt.
Seasoned butter or “beurre compose” as the French call it, comes in dozens of flavors and colors and can combine fresh or cooked ingredients. These should be finely chopped or puréed before being added.
Keep the seasoned butter wrapped until very last moment. If you want to keep the butter pats cold, put them in a dish with a little water and some ice cubes on the bottom.
Herb Butter Recipe
Makes about 1 cup (250 ml)
Ingredients: 1/2 pound (240 g) butter, 1 teaspoon each: chopped fresh tarragon, oregano, and basil, 1 tablespoon chopped fresh parsley, 1/2 garlic clove peeled, 1/2 teaspoon Worcestershire sauce, freshly ground black pepper, to taste
Instructions: Allow butter to reach room temperature. In a food processor, combine all ingredients. Process well. Prepare a butter roll. Refrigerate it for at least 1 hour. Cut into rounds before serving.

Ingredients
- 2 1 pound (480 g) bone-in strip steaks, cut into 1½ inch thick
- For the Steak Seasoning:
- 3/4 teaspoon rock salt
- 1 teaspoon whole black peppercorns
- 1/2 teaspoon each: dried minced garlic and onion
- 1/4 teaspoon fennel seeds
- 1/8 teaspoon red chili pepper flakes
Method
Step 1
Add all seasoning ingredients to a mortar and pestle them coarsely grind. Pat beef steaks dry with a paper towel. Drizzle both sides of steaks with vegetable oil, then rub with seasoning mixture.
Step 2
Preheat the oven or grill (heat gas oven on high for 10-15 minutes). Add seasoned steaks and sear on both sides for 7-10 minutes or until your preferred level of the doneness.
Step 3
Remove grilled steaks from the oven and transfer to serving plates. Top with herb butter slices. Serve hot.
