Pressure Cooker Ground Beef Chili Recipe

Ground beef with vegetables and spices cooked in a pressure cooker.

Makes 6 servings

Ingredients: 1 tablespoon olive oil, 1 large yellow onion, peeled and chopped, 1 green bell pepper, stemmed, seeded, and chopped, 2 teaspoons minced garlic, 2 pounds (960 g) lean ground beef, 28 oz (840 ml) can dice tomatoes, undrained, 2 15 oz (450 ml) each) can red kidney beans, drained and rinsed under cold running water, 6 tablespoons chili powder, 2 teaspoons ground cumin, 2 teaspoons dried oregano, 1/2 cup (125 ml) chicken broth

Instructions: In a pressure cooker, heat olive oil over medium heat. Add chopped yellow onion and green bell pepper and cook, stirring, until the onions are softened, for about 4 minutes. Stir in minced garlic and cook for a further 30 seconds.

Using a fork, crumble the ground beef. Add to pressure cooker and cook, stirring often, until the beef loses its pink color. Stir in undrained tomatoes, beans, chili powder, oregano, and cumin. Pour in 1/2 cup (125 ml) chicken broth and mix well.

Cover the pressure cooker and lock the lid. Set burner heat to high pressure. When the cooker reaches high pressure, reduce heat to low. Set the timer to cook for 8 minutes.

Open pressure cooker, using the Quick Release method. Unlock and open the pot. Stir well. Ladle into soup bowls. Serve hot. More pressure beef recipes.

  • 1 yellow onion, peeled and chopped
  • 1 large cubanelle, stemmed, seeded, and chopped
  • 2 pounds (960 g) lean ground beef
  • 28 oz (840 ml) can crushed tomatoes
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup dark brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sweet paprika
  • 1/4 teaspoon ground cloves

Method

Step 1

Place quinoa in a pressure cooker. Fill the cooker with water until grains are submerged by 2 inches (5 cm).

Step 2

Cover the pressure cooker and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 5 minutes.

Step 3

Open pressure cooker, using the Quick Release method. Unlock and open the pot. Using a fine-mesh sieve set in the sink.

Step 4

Heat olive oil in a pressure cooker turned to saute mode. Add chopped onion and cubanelle. Cook, stirring, until onions are softened, for about 4 minutes.

Step 5

Using a fork, crumble ground beef. Add to the pressure cooker and stir in the garlic. Cook, stirring often, until meat is no longer pink, for about 5-6 minutes.

Step 6

Stir in the remaining ingredients and well-drained cooked quinoa. Combine well.

Step 7

Close the pressure cooker and lock the lid. Set the machine to cook to high pressure. Set the timer to cook for 11 minutes.

Step 8

Open pressure cooker, using the Quick Release method. Unlock and open the lid. Stir well.
