Roast Chicken with Rice Stuffing Recipe

Makes 4-6 servings

Ingredients: 5-5½ pounds (2.3 -2.5 kg) whole chicken, prepared for roasting, 1 recipe rice stuffing (see recipe below), 1 tablespoon (15 ml) unsalted butter, 1 tablespoon (15 ml) vegetable oil, salt and freshly ground black pepper, to taste

Instructions: Preheat the oven to 400º F (200º C). Season chicken cavity with salt and black pepper and fill with rice stuffing. Secure with kitchen string. Place unsalted butter and vegetable oil in the roasting pan and heat on the burner. Place stuffed whole chicken on its back in pan and bast with fat. Season well.


Roast chicken for 45 minutes, basting frequently. Turn chicken on its side and cook for further 15 minutes. Reduce heat to 375º F (190º C). Replace chicken on its back. Cook for 35-40 minutes, basting with fat frequently.

Rice Stuffing Recipe

Ingredients: 1 tablespoon unsalted butter, 2 green onions, chopped, 1/2 celery stalk, finely chopped, 4 water chestnuts, finely sliced, 1/4 cup bamboo shoots, chopped, 2 cups cooked long-grain and wild rice, 5 slices white bread, 1 tablespoon chopped fresh parsley, 1/4 cup (60 ml) heavy cream, pinch of thyme, pinch of ground ginger, pinch of allspice, salt and freshly ground black pepper

Instructions: Heat butter in a large frying pan over medium-high heat. Add vegetables and mix well. Cook, stirring occasionally, for 2 minutes. Season with salt and black pepper and mix again.

Stir in cooked rice and herbs. Mix well. Remove the frying pan from the heat and cool.

In a large bowl, combine sliced white bread, parsley, and heavy cream. Mash bread and add the rice. Mix until well combined. Adjust seasoning to taste.

Best Roasted Chicken Breasts Recipe

Ingredients

  • 2 whole chicken breasts (about 2 pounds), halved and skinned
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted margarine
  • 2 firm cooking apples, cored and cubed but not peeled
  • 1 small cabbage (about 1 pound) ,cut into thick slices(about 3 cups)
  • 1 medium-size yellow onion, sliced
  • 1/4 cup (60 ml) unsweetened apple juice
  • 1 tablespoon light brown sugar
  • 1½ teaspoons cider vinegar
  • 1/4 teaspoon caraway seeds

Method

Step 1

Sprinkle the chicken breasts with the pepper.

Step 2

In a heavy 12-inch skillet, melt 1 tablespoon of the margarine over moderately high heat. Add the breasts and cook for 2½ minutes on each side, transfer to a platter. Reduce the heat to moderate, add the apples, and cook, stirring frequently, until golden about 5 minutes. Transfer to the platter with the chicken.

Step 3

Melt the remaining margarine in the skillet and add the cabbage, carrots, and onion; cook, stirring, until tender but still crisp-about 5 minutes. Stir in the apple juice, brown sugar, vinegar, and caraway seeds. Return the and half of the apples to the skillet. Reduce the heat to low; cover and simmer for 20 minutes.

Step 4

Transfer roasted chicken breasts with cabbage and apples to a warm platter, ladle the sauce over it and garnish with the reserved apples.
