Slow Cooker Beef Stew da Vinci Recipe
Very delicious Italian stew cooked in slow cooker and served over cooked linguine.
Makes 4 servings
Ingredients: 1¼ pounds (600 g) lean beef round steak, cut into cubes, 1 can 14½ oz (435 ml) diced tomatoes, undrained, 1 cup chopped yellow onion, 1 cup chopped green bell peppers, 1 cup sliced mushrooms, 1/4 cup chopped shallots, 1 teaspoon beef bouillon crystals, 1 teaspoon dried basil leaves, 1 teaspoon garlic powder, 2 tablespoons cornstarch, 1/4 cup (60 ml0 water, salt and freshly ground black pepper, to taste, 6 oz (180 g) cooked linguine, warm, 1/4 cup chopped fresh parsley, 1/4 cup grated Parmesan cheese
Instructions: In a slow cooker, combine all ingredients, except cornstarch, water, seasoning, cooked linguine, parsley, and Parmesan cheese. Cover cooker and on low-heat setting for 6-8 hours.
Switch heat to high and cook for further 10 minutes, then stir in combined cornstarch and water, stirring 2-3 minutes. Turn off the slow cooker. Open the lid and season beef stew with salt and black pepper. Serve hot over cooked linguine. Sprinkle with chopped fresh parsley and Parmesan cheese.

Ingredients
- 1 pound (480 g) beef round, cubed
- 4 tablespoons seasoned flour (see recipe below)
- 1 1/2 cups (370 ml) beef broth
- 1 teaspoon Worcestershire sauce
- 1 garlic clove, peeled
- 1 bay leaf
- 4 carrots, sliced
- 3 potatoes, peeled and cubed
- 2 yeloow onions, peeled and diced
- 1 teaspoon fresh thyme
- 1 teaspoon fresh basil
- 1 tablespoon fresh parsley
- 1 teaspoon fresh marjoram
- Seasoned Flour: 1 cup (250 g_ all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/4 teaspoon freshly ground black pepper
Method
Step 1
Put meat in slow cooker. Add seasoned flour. Toss with meat.
Step 2
Stir in remaining ingredients. Mix well. Cover with a lid. Cook beef stew on High 4-6 hours, or Low 10-12 hours.
Step 3
For Seasoned Flour: In a small bowl, combine all ingredients. Mix well.
