An excellent appetizer or main dish.Very easy to prepare. Eggs may be everyday items but they needn’t be ordinary.
We serve them up in a variety of unusual ways for a slimming menu; in souffles and pancakes, even in a quiche. Eggs can be a thirty meal, especially when combined with vegetables like zucchini, mushrooms, asparagus, or bell peppers.

Eggs should be consumed at mealtime only and may be split with items from the cheese, peanut butter, poultry, veal, fish, and legumes categories. Select 4 eggs a week, small. medium, large, or extra-large. If an egg or portion thereof is used in combination with any of the above categories, it must be counted toward the weekly total of 4 eggs.

Egg whites and yolks may be prepared in separate recipes provided both whites and yolks are consumed as part of the same meal. Chicken eggs (white or brown), egg substitutes, and quail eggs may be selected. Four quail eggs equal 1 chicken egg.

Raw eggs may be used but should be carefully inspected for cracks. Cracked raw eggs may contain salmonella, a bacteria that causes intestinal upset.

Eggs Stuffed with Mushroom Duxelles Recipe

Makes 4 servings

Ingredients: 8 hard-boiled eggs, 2 tablespoons sour cream, 1 cup mushroom duxelles (see recipe below), 1/4 cup (60 ml) 35% cream, 1 tablespoon chopped fresh parsley, salt and freshly ground black pepper, to taste

Instructions: Preheat the oven to 400º F (200º C). Peel hard-boiled eggs, then slice them in half. carefully remove yolks and force through a sieve. Add sour cream to egg yolks and stir well. Stir in mushroom duxelles, season with salt and black pepper, and stir again.

Fill egg whites with stuffing and place in baking dish. Pour in cream and cook in preheated oven for 6-7 minutes. Sprinkle with chopped fresh parsley and serve immediately.

Mushroom Duxelles Recipe

Ingredients: 3 tablespoons unsalted butter, 2 shallots, finely chopped, 1 tablespoon chopped fresh parsley, 1 pound (480 g) mushrooms, finely chopped, 1/4 cup (60 ml) 35% cream, dash Tabasco sauce, salt and freshly ground black pepper, to taste

Instructions: In a frying pan, heat butter over medium-high heat. Add chopped shallots and parsley. Reduce heat to low. Cook, stirring, for 3 minutes. Add chopped mushrooms and stir well. Stir in Tabasco sauce, season with salt and black pepper. Cook over low heat for further 8-10 minutes, mixing twice during cooking process.

Pour in cream and mix well to combine. Cook for additional 3-4 minutes or until liquid evaporates. Remove mushroom mixture from the heat and transfer to a blender. Blend until smooth.

Best Stuffed Deviled Eggs Recipe


  • 6 hard-boiled eggs
  • cubed ham
  • green olives
  • 3 tablespoons unsalted butter at room temperature
  • 2 tablespoons mayonnaise
  • 1 teaspoon Worcestershire sauce
  • salt and freshly ground black pepper


Step 1

Shell eggs and with a small, sharp knife, slice them in half lengthwise.

Step 2

Gently remove yolks and place them in a small bowl. With a fork, finely mash yolks. Add remaining ingredients and beat well using a wire whisk.

Step 3

With spoon, place yolk mixture into egg white centers. Cover eggs and refrigerate until you are ready to serve.
