Eggs Stuffed with Mushroom Duxelles Recipe
Makes 4 servings
Ingredients: 8 hard-boiled eggs, 2 tablespoons sour cream, 1 cup mushroom duxelles (see recipe below), 1/4 cup (60 ml) 35% cream, 1 tablespoon chopped fresh parsley, salt and freshly ground black pepper, to taste
Instructions: Preheat the oven to 400º F (200º C). Peel hard-boiled eggs, then slice them in half. Carefully remove yolks and force through a sieve. Add sour cream to egg yolks and stir well. Stir in mushroom duxelles, season with salt and black pepper, and stir again.
Fill egg whites with stuffing and place in baking dish. Pour in cream and cook in preheated oven for 6-7 minutes. Sprinkle with chopped fresh parsley and serve immediately.
Mushroom Duxelles Recipe
Ingredients: 3 tablespoons unsalted butter, 2 shallots, finely chopped, 1 tablespoon chopped fresh parsley, 1 pound (480 g) mushrooms, finely chopped, 1/4 cup (60 ml) 35% cream, dash Tabasco sauce, salt and freshly ground black pepper, to taste
Instructions: In a frying pan, heat butter over medium-high heat. Add chopped shallots and parsley. Reduce heat to low. Cook, stirring, for 3 minutes. Add chopped mushrooms and stir well. Stir in Tabasco sauce, season with salt and black pepper. Cook over low heat for further 8-10 minutes, mixing twice during cooking process.
Pour in cream and mix well to combine. Cook for additional 3-4 minutes or until liquid evaporates. Remove mushroom mixture from the heat and transfer to a blender. Blend until smooth.

Best Stuffed Deviled Eggs Recipe
- 6 hard-boiled eggs
- cubed ham
- green olives
- 3 tablespoons unsalted butter at room temperature
- 2 tablespoons mayonnaise
- 1 teaspoon Worcestershire sauce
- salt and freshly ground black pepper
Shell eggs and with a small, sharp knife, slice them in half lengthwise.
Gently remove yolks and place them in a small bowl. With a fork, finely mash yolks. Add remaining ingredients and beat well using a wire whisk.
