Broiled Fillet of Porgy with Shallot Butter Recipe
Makes 4 servings
Ingredients: 4 porgy fillets, 1 oz (30 ml) vegetable oil, salt and freshly ground black pepper, freshly squeezed juice of half lemon, 1/4 cup (60 ml) shallot butter
Instructions: Preheat the oven to broil functions. Wash porgy fillets under cold running water, then pat dry with paper towels. Brush fish fillets with vegetable oil, then season with salt and black pepper.
Arrange seasoned fillets in a baking dish. Broil 6 inches (15 cm) away from the top element for 7 minutes on each side, basting occasionally with vegetable oil.
Remove the baking dish from the oven. Season to taste with salt and black pepper. Pour lemon juice over the fillets. Spoonย 1 tablespoon (15 ml) shallot butter on each baked fillet. Return the fillets to the oven. Broil until the shallot butter has melted.
Remove broiled fish fillets from the oven and transfer them to serving plates. Serve immediately.
Broiled Salmon Steak with Lemon Butter Recipe
Ingredients
- 4 salmon steaks
- salt and freshly ground black pepper
- 1 tablespoon unsalted butter
- For Lemon Butter:
- 1/2 cup unsalted butter
- 1/4 teaspoon finely grated lemon rind
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon chopped parsley
- salt and freshly ground black pepper
- cayenne pepper
Method
Step 1
Heat the broiler. Trim and wipe the steaks and rub with salt and pepper. Lightly brush the broiler rack with butter and place salmon steaks on it. Brush the tops of steaks with butter.
Step 2
Broil quickly far enough from the source of heat to cook without scorching. Turn the salmon steaks once, using a turner and spatula to avoid breaking the fish. Brush the second side with butter and broil until cooked. Do not overcook. The cooking time for broiled salmon steaks will depend on the thickness of steaks, but will about 5 minutes on each side.
Step 3
To make the lemon butter for broiled salmon steaks: Cream the butter and blend into the flavorings, taste, and adjust the flavor as preferred. Shape the lemon butter into a block or into pats and chill until ready to use.
