Chicken Noodle Soup
Ingredients
- 8 oz (240 g) fresh noodles
- 2 cloves garlic, peeled and finely minced
- 1 tablespoon cooking oil
- 1½ cups (370 ml) chicken broth
- 1/2 cup (125 ml) fresh cold water
- 4 fresh shiitake mushrooms, rinsed and sliced
- 4 slices carrot
- 4 babby bok choy
- 1 dash white pepper
- salt to taste
- 4 oz (120 g) cooked chicken, shredded
Method
Step 1
In a large saucepan, combine noodles and water. Bring to a boil and cook until tender.
Step 2
Rinse cooked noodles under cold water, drain and set aside. In a nonstick skillet, heat cooking oil, add garlic, and cook until golden brown. Set aside.
Step 3
In another saucepan, combine chicken broth and 1/2 cup of water. Bring to a boil. Add mushrooms, carrot, baby bok choy, and seasoning. Once they are cooked, turn off the heat.
Step 4
Add cooked noodles to the bowl, and top with shredded chicken. Ladle the soup on top of the cooked noodles and pour garlic oil over it.
Step 5
Serve chicken noodle soup immediately. If you like, you can serve it with cut red chilies in soy sauce(optional).
