Ingredients
- 6 large skinless and boneless chicken breasts
- salt and freshly ground black pepper
- 6 thin slices of cheese
- 6 thin streaky bacon rashers
- plain flour
- 2 oz (60 g) butter
- 2 tablespoons olive oil
- 1 bottle(330 ml) lighr ale
- 12 green olives,pitted
- 2 teaspoons mustard
Method
Step 1
Season underside of chicken breasts and spread with mustard,then place a slice of cheese on each. Roll up and wrap a rasher of bacon around. Tie rolls firmly with string and coat lightly in plain flour.
Step 2
In ovenproof casserole,combine butter and olive oil. Heat over medium-high heat.
Step 3
Add chicken rolls and lightly brown all over. Add beer(take care that it doesn't fill more than half the casserole). Cover and simmer for 10 minutes.
Step 4
Scald pitted olives in boiling water. Drain and add to casserole. Cover and simmer for additional 10 minutes.
Step 5
Remove string from cooked cheesy chicken rolls. Serve hot with cooked rice or fried potatoes.
