Creamy Goat’s Cheese Spaghetti Recipe
This delicious spaghetti with spinach and goat cheese is so easy and simple to make. This recipe is perfect for busy nights when you need a quick and tasty dinner! Enjoy it!
Makes 2 servings
Ingredients: 6 oz (180 g) uncooked Italian spaghetti, 2 tablespoons (30 ml) unsalted butter, 3 cloves garlic, peeled and smashed, 1/4 cup (60 ml) heavy (double) cream, 2 cups (500 ml) roughly chopped fresh spinach, 4 oz (120 g) goat cheese, chunked, 1/2 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper
Instructions: Bring a large saucepan of water to a boil over medium-high heat. Add Italian spaghetti and cook according to package directions, then drain and set aside.
Meanwhile, in a large nonstick skillet, melt the butter over medium heat. Add smashed garlic and cook, stirring, until fragrant. Add heavy cream and stir it with the butter until well combined. Reduce heat to low and continue simmering for a few minutes. When the cream starts bubbling, discard the garlic cloves.
Stir in chopped fresh spinach. Continue cooking and stirring until spinach wilts. Stir in chunked goat’s cheese. Continue cooking and stirring until goat’s cheese is melted and the sauce is creamy.
Season cheese mixture with salt and black pepper to taste. Mix well. Keep the creamy sauce warm until spaghetti is ready. Transfer reserved cooked spaghetti to the creamy sauce and toss well.

Cooked Italian Spaghetti with Goat’s Cheese Recipe
Ingredients
- 1 garlic clove
- 2 anchovy fillets
- 2 tablespoons olive oil
- 1 tablespoon chopped parsley
- 8 oz (240 g) uncooked spaghetti
- 4 oz (120 g) Firm goat's cheese
- 1 oz (30 g) unsalted butter
- salt and freshly ground black pepper
Method
Step 1
Peel and crush the garlic into a bowl. Add the anchovy fillets and pound to a paste with a wooden spoon. Beat in the oil, parsley, and seasoning. Leave to stand for 15 minutes.
Step 2
Meanwhile, cook spaghetti in boiling salted water until tender. During the cheese and cut into small cubes. Drain the spaghetti in a colander.
Step 3
Melt the butter in the spaghetti pan and add the cheese. Cook, stirring over low heat for 2 minutes. Return the spaghetti to the pan and toss lightly till coated with butter. Arrange spaghetti with goat's cheese in a warmed serving dish, pour the anchovy dressing over and toss lightly serving with crusty bread. Sprinkle with more grated cheese.
