Makes 6 servings
Ingredients: 1 pound boneless and skinless chicken breasts, cut into cubes, 2 cups (500 ml) low-sodium fat-free chicken broth, 14½ oz (435 ml) can diced tomatoes, undrained, 10 oz 9300 g) package frozen black-eyed peas, thawed, 10 oz (300 g) package succotash, 1 medium ham hock, 1 cup (250 ml) chopped yellow onion, 1/3 cup (80 ml) chopped fresh celery, 1/3 cup (80 ml) chopped red or green bell peppers, 1 bay leaf, 1/4 teaspoon dried thyme leaves, 1 cup (250 ml) frozen sliced okra, thawed, salt and freshly ground black pepper, to taste
Instructions: In a 6-quart (6 L) crock pot, combine all ingredients, except thawed okra, salt, and black pepper. Cover the cooker and cook on low-heat setting for 6-8 hours, adding okra during the last 30 minutes.
Turn off the crock pot and open the lid. Discard ham hock and bay leaf. Season to taste with salt and black pepper. Stir well. transfer cooked chicken gumbo to soup bowls. Serve hot.

Crock Pot Honey-Soy Chicken Thighs Recipe
Ingredients
- 2 pounds (960 g) skin-on, bone-in chicken thighs, fat trimmed
- 1/3 cup (80 ml) reduced-sodium soy sauce
- 1/4 cup (60 ml) clear honey
- 1/4 cup (60 ml) water
- 1 tablespoon tomato paste
- 3/4 teaspoon freshly ground ginger
- 1/4 teaspoon freshly ground black pepper
- 2 cloves garlic, peeled and minced
- chopped green onion
Method
Step 1
Place chicken thighs on the crock pot.
Step 2
In a medium mixing bowl, combine remaining ingredients, except chopped green onions. Mix well and pour over chicken.
Step 3
Close the crock pot and cook on low-heat setting for 6 hours.
Step 4
Turn off the crock pot and open the lid. Stir the chicken mixture well and transfer to serving plates. Sprinkle with chopped green onions. Serve over cooked rice.
