Crock Pot Lemon Chicken Noodle Soup Recipe
- 6 boneless and skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 2 bay leaves
- 2 medium carrots, peeled and chopped
- 1 medium yellow onion, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, peeled and minced
- 1 teaspoon sliced ginger
- 1 tablespoon sesame oil
- 2 cups uncooked rotini
- 3 tablespoons freshly squeezed lemon juice
- 2 tablespoons reduced-sodium soy sauce
- 6 cups (1.5 L) chicken stock
- chopped fresh parsley, for garnish
In a 5-6-quart (5-6 L) slow cooker, combine chicken thighs, salt, thyme, bay leaves, carrots, onions, celery, ginger, garlic, and sesame oil. Stir well. Pour in the chicken stock and mix again.
Cover the pot and cook on low-heat setting for 8 hours or until chicken and vegetables are tender.
Sweech heat to high, open the lid and stir in uncooked rotini. Recover the lid and cook for a fruther 30 minutes.
Stir in the lemon juice and soy sauce. Discard bay leaves and sliced ginger.
Garnish with chopped fresh parsley. Serve hot.
