Crock Pot Pibil-Style Pork Ribs Recipe
Makes 10-12 servings
Ingredients: 2 tablespoons (30 ml) achiote seeds, 2 teaspoons (10 ml) cumin seeds, 1 teaspoon (5 ml) whole black peppercorns, 1 teaspoon (5 ml) mustard seeds, 1/2 teaspoon (3 ml) dried oregano, 4 whole allspice, 1 teaspoon (5 ml) coriander seeds, 3 whole cloves, 1 bay leaf, crumbled, 2 limes, 2 oranges, 1/4 cup (60 ml) white vinegar, 3 fresh jalapeño chili peppers, seeded and coarsely chopped, 1 oz (30 ml) tequila, 8 cloves garlic, peeled and coarsely chopped, 1 tablespoon 915 ml) salt, 5 pounds (2.5 kg) boneless country-style pork ribs, fat trimmed, 2 large yellow onions, peeled and cut into wedges, banana leaves, snipped fresh cilantro leaves, 5-6 cups hot cooked white rice, lime wedges
Instructions: In a grinder, combine achiote seeds, cumin seeds, whole peppercorns, coriander seeds, brown mustard seeds, dried oregano, allspice, cloves, and crumbled bay leaf. Cover and process until finely ground. Remove dry mixture from the grinder and set aside.
Peel limes and oranges, reserving the peel. Coarsely chop the peel, then place in a blender. Squeeze the juice from peeled oranges and limes. Pour into the blender, then add vinegar, jalapeño peppers, tequila, garlic, and salt. Cover the blender and blend until smooth.
In a large mixing bowl, pork ribs and yellow onion. Mix well. Stir in the spice mixture and toss well to coat meat completely.
Line a 5-6-quart (5-6 L) crock pot with a layer of banana leaves. Place the rib mixture inside the banana leaves, then fold the banana leaves over the ribs.
Cover crock pot and cook on low-heat setting for 8-9 hours. Turn off the crock pot and open the lid. Transfer cooked ribs and onions to a serving platter. Drizzle with cooking liquid and sprinkle with fresh cilantro. Garnish with lime wedges and serve over the cooked rice.

- 2 racks of pork back ribs, sliced
- 1 cup (250 ml) ketchup
- 3 tablespoons (45 ml) soy sauce
- 3 tablespoons (45 ml) maple syrup
- 1 tablespoon (15 ml) honey
- 2 tablespoons (30 ml) chili powder
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) ground cumin
- salt and freshly ground black pepper
Method
Step 1
Place ribs in a crock pot.
Step 2
In a medium mixing bowl, combine remaining ingredients. Mix well and pour over ribs in the crock pot. Toss well to coat ribs completely.
Step 3
Cover the crock pot and cook on low-heat setting for 6-8 hours, or until ribs are cooked through.
