Crock pot stuffed bell peppers recipe. Bell peppers stuffed with cooked rice, meat, cheese cooked in a crock pot/slow cooker. Use any of bell peppers (green, yellow, red) to make this recipe. Also, use ground beef, turkey, or chicken meat (I used ground turkey)

Crock Pot Stuffed Bell Peppers Recipe
Ingredients
- 2 cups cooked basmati rice
- 6 bell peppers, cored
- 1 pound (480 g) lean ground turkey
- 2 cups shredded Mozzarella cheese
- 1 medium tomato, finely chopped
- 3 tablespoons taco seasoning
Method
Step 1
Cook the rice according to the packing instructions. Set aside and allow to cool.
Step 2
Using a toothpick, poke 3-4 hols towards the bottom of each bell pepper.
Step 3
In a large mixing bowl, combine cooked rice, ground turkey, finely chopped tomato taco seasoning, and 1¼ cups of shredded cheese. Stir well.
Step 4
Spoon the filling into prepared bell peppers. Arrange stuffed peppers in a 6-quart (6 L) slow cooker. Top with remaining cheese.
Step 5
Close the cooker and cook on low-heat setting for 4-5 hours.
