Easy Caprese chicken recipe. Boneless and skinless chicken breasts with tomatoes and Mozzarella cheese cooked in a skillet. This delicious and easy dinner recipe belongs to Italian cuisine.

Easy Caprese Chicken Recipe

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 4 boneless and skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • salt and freshly ground black pepper, to taste
  • 1/2 cup (125 ml) balsamic vinegar
  • 1½ tablespoons brown sugar
  • 4 cloves garlic, peeled and minced
  • 3-4 tomatoes, sliced
  • 3 tablespoons chopped fresh basil
  • 4 slices Mozzarella cheese

Method

Step 1

In a large nonstick skillet, heat olive oil over medium-high heat.

Step 2

Season chicken breasts with Italian seasoning, salt, and black pepper. Add seasoned meat to the skillet and cook until golden, turning once, for about 6-8 minutes per side.

Step 3

Remove cooked chicken from the pan and transfer to a serving plate. Cover and keep warm.

Step 4

Reduce the heat to medium-low. Add balsamic vinegar and brown sugar to the same skillet, then stir well to combine. Stir in mincd garlic and cook for a further 1 minute. Add sliced tomatoes and sprinkle with salt. Allow tomatoes to simmer until soft, for about 5-7 minutes.

Step 5

Stir half of chopped fresh basil and return chicken to the skillet. Top with sliced Mozzarella, then cover to melt cheese. Place cooked tomatotes over cheese and chicken. Sprinkle with remaining basil and transfer to serving plates.
